Honey Mustard Salmon

Ingredients

The salmon and sauce

  • 1 ¼ lbs salmon cut into fillets
  • ¼ cup dijon mustard
  • 2 tablespoons whole grain mustard
  • ¼ cup honey
  • 1 tablespoon soy sauce
  • ¼ teaspoon onion powder
  • 1 tablespoon olive oil (divided use)

The vegetables

  • 2 cups broccoli florets
  • to taste salt and pepper
  • optional lemon wedges
  • optional chopped parsley

Instructions

  1. Mix dijon mustard, whole grain mustard, honey, soy sauce, and onion powder in a small bowl.
  2. Heat 1 teaspoon of olive oil in a large pan over medium-high heat and cook the broccoli for 3-4 minutes.
  3. Add 1 tablespoon of water to the broccoli and cook for 2-3 minutes more until tender, then season with salt and pepper and set aside.
  4. Heat the remaining olive oil over high heat, season the salmon with salt and pepper, and cook for approximately 5 minutes on each side.
  5. Brush the tops of the salmon fillets with the honey mustard mixture, place sauce side down in the pan, and cook for 1 more minute.
  6. Return the broccoli to the pan with the salmon and cook for 2-3 minutes until heated through.
  7. Drizzle with remaining honey mustard mixture and serve, optionally garnished with parsley and lemon wedges.
