Honey Mustard Salmon

Ingredients

The salmon

  • 2 pound side of salmon, boneless and skinless
  • 1 tablespoon finely-chopped fresh parsley leaves

The honey mustard sauce

  • cup whole grain mustard
  • ¼ cup honey
  • 4 cloves garlic, peeled and minced
  • 2 tablespoons fresh lemon juice
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon Kosher salt
  • teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F or heat a grill to medium.
  2. Prepare the honey mustard sauce by whisking all sauce ingredients together in a small bowl.
  3. Line a large baking sheet with aluminum foil and mist it with cooking spray.
  4. Place the salmon in the center of the foil and spoon the honey mustard sauce over it, spreading it evenly.
  5. Fold the foil over the salmon to create a sealed packet.
  6. For oven cooking, bake for 14-15 minutes until almost cooked through, then broil for 2-3 minutes to brown the top.
  7. For grilling, cook the packet for 12-14 minutes, then open and grill for an additional 3-4 minutes until cooked through.
  8. Remove from heat, sprinkle with parsley, and serve immediately.
