Ingredients

The salmon

  • 12 ounce salmon (2 six-ounce filets, skin off)
  • 2 tablespoon olive oil

The dry rub

  • ½ teaspoon smoked paprika
  • ½ teaspoon chili powder
  • ½ teaspoon granulated garlic
  • ½ teaspoon coarse sea salt
  • ¼ teaspoon cracked black pepper
  • ½ teaspoon lemon zest

The barbecue sauce

  • 1 tablespoon Colman's English mustard
  • 1 tablespoon honey
  • 1 teaspoon lemon juice
  • ½ teaspoon lemon zest

The garnish

  • 1 teaspoon Italian parsley (finely chopped)
  • ½ teaspoon lemon zest

Instructions

  1. Mix the dry rub ingredients together in a small bowl.
  2. Coat the salmon in olive oil and apply the dry rub on top.
  3. Refrigerate the salmon for 20-30 minutes to let the flavors penetrate.
  4. Combine the barbecue sauce ingredients in a small bowl and mix well.
  5. Preheat the grill to 350-400°F and prepare the grates with oil.
  6. Place the salmon seasoned side down on the grill and cook for 4-5 minutes.
  7. Carefully turn the salmon over, coat with honey mustard barbecue sauce, and grill for another 3-4 minutes.
  8. Remove from the grill and garnish with parsley and lemon zest.
