30-Minute Peanut Noodles with Broccoli

Ingredients

The noodles

  • 8 oz whole wheat spaghetti
  • 1 tbsp extra virgin olive oil
  • 1 lb broccoli florets
  • 3-4 medium carrots
  • ½ cup green onion, chopped
  • ½ cup cilantro, chopped
  • 2-4 tbsp roasted peanuts, for garnish

The peanut sauce

  • ½ cup natural peanut butter
  • ¼ cup unsweetened almond milk
  • ¼ cup reduced sodium soy sauce
  • 2 tbsp apple cider vinegar
  • 2 tbsp maple syrup
  • 1 tbsp juice of lime
  • 1 tbsp sriracha

Instructions

  1. Cook the pasta according to package directions, then drain and set aside.
  2. In a large skillet, warm the olive oil over medium heat, then add broccoli and carrots, cooking for 8-10 minutes until softened.
  3. In a medium bowl, whisk together the peanut sauce ingredients until smooth.
  4. Remove the skillet from heat, add the cooked noodles and peanut sauce, and toss everything together.
  5. Top with cilantro, green onions, and peanuts before serving immediately.
