Paleo Coleslaw with Apples and Bacon

Instructions
- Cook the bacon until crispy, then chop it into bits.
- While the bacon cooks, chop the cabbage and apples, and grate the carrots, adding them to a large bowl.
- Mash the avocado in a separate bowl.
- Combine the bacon bits, mashed avocado, mustard, olive oil, vinegar, and pepper in the large bowl with the cabbage mixture.
- Mix everything well to coat the ingredients evenly.
- Taste and adjust salt and pepper as needed.
- Serve immediately or refrigerate overnight for better flavor.
