Paleo Coleslaw with Apples and Bacon

Ingredients

The salad

  • ½ slices bacon, cooked and chopped into bits
  • 1 head cabbage, roughly chopped
  • 2 apples julienned
  • 3 carrots grated
  • 1 avocado mashed

The dressing

  • 2 Tbsp mustard
  • ¼ cup olive oil
  • ¼ cup apple cider vinegar
  • 1 tsp pepper
  • to taste salt

Instructions

  1. Cook the bacon until crispy, then chop it into bits.
  2. While the bacon cooks, chop the cabbage and apples, and grate the carrots, adding them to a large bowl.
  3. Mash the avocado in a separate bowl.
  4. Combine the bacon bits, mashed avocado, mustard, olive oil, vinegar, and pepper in the large bowl with the cabbage mixture.
  5. Mix everything well to coat the ingredients evenly.
  6. Taste and adjust salt and pepper as needed.
  7. Serve immediately or refrigerate overnight for better flavor.
