Instructions
- Preheat the oven to 400ºF and prepare a baking sheet.
- Mix harissa, olive oil, honey, salt, and lemon juice to create the marinade.
- Wash and cut the potatoes into cubes, slice the carrots, cut the broccoli into florets, and chop the onion.
- Place all vegetables on the baking sheet.
- Pour the harissa marinade over the vegetables and toss to coat evenly.
- Roast the vegetables for 30 minutes, stir, then roast for an additional 10 minutes until tender and browned.
- Top with chopped cilantro before serving.
