Spicy Harissa Roasted Vegetables

Ingredients

Harissa Marinade

  • ¼ cup harissa (paste)
  • 2 Tbsp olive oil
  • ½ Tbsp honey
  • ½ tsp salt
  • 1 Tbsp lemon juice

Vegetable Medley

  • 6 small red potatoes
  • 1 crown broccoli
  • 3 carrots
  • 1 small red onion
  • 1 handful chopped fresh cilantro

Instructions

  1. Preheat the oven to 400ºF and prepare a baking sheet.
  2. Mix harissa, olive oil, honey, salt, and lemon juice to create the marinade.
  3. Wash and cut the potatoes into cubes, slice the carrots, cut the broccoli into florets, and chop the onion.
  4. Place all vegetables on the baking sheet.
  5. Pour the harissa marinade over the vegetables and toss to coat evenly.
  6. Roast the vegetables for 30 minutes, stir, then roast for an additional 10 minutes until tender and browned.
  7. Top with chopped cilantro before serving.
