Vegan Roasted Garlic Mashed Cauliflower

Ingredients

The cauliflower and garlic

  • 2 medium heads cauliflower, chopped into florets
  • 2 bulbs garlic

The mash

  • 1 tbsp extra virgin olive oil, divided
  • 1 cup unsweetened almond or cashew milk
  • 2 tbsp vegan buttery spread, melted
  • 1 tsp salt
  • to taste freshly ground black pepper
  • ½ cup chopped green onions

Instructions

  1. Preheat the oven to 375°F and prepare a baking sheet.
  2. Spread the cauliflower florets on the baking sheet and drizzle with olive oil.
  3. Prepare the garlic by chopping off the tops of the bulbs, rubbing them with olive oil, and wrapping them in foil.
  4. Place the wrapped garlic on the baking sheet with the cauliflower and bake for 35 minutes, stirring halfway through.
  5. Once cooked, allow the cauliflower to cool slightly and extract the soft garlic cloves from their skins.
  6. In a food processor, combine the roasted garlic, cauliflower, milk, melted vegan butter, salt, and pepper, and blend until smooth.
  7. Fold in the chopped green onions and serve.
