Vegan Roasted Garlic Mashed Cauliflower

unsweetened almond or cashew milk

vegan buttery spread, melted

Instructions
- Preheat the oven to 375°F and prepare a baking sheet.
- Spread the cauliflower florets on the baking sheet and drizzle with olive oil.
- Prepare the garlic by chopping off the tops of the bulbs, rubbing them with olive oil, and wrapping them in foil.
- Place the wrapped garlic on the baking sheet with the cauliflower and bake for 35 minutes, stirring halfway through.
- Once cooked, allow the cauliflower to cool slightly and extract the soft garlic cloves from their skins.
- In a food processor, combine the roasted garlic, cauliflower, milk, melted vegan butter, salt, and pepper, and blend until smooth.
- Fold in the chopped green onions and serve.
