Roasted Garlic Mashed Cauliflower

Instructions
- Preheat the oven to 400°F.
- Cut the top ½-inch of the garlic head to expose the cloves, drizzle with olive oil, and wrap in foil.
- Roast the garlic for 40-45 minutes until softened and lightly golden.
- Bring ½-inch of water to a boil in a large pot, place a steamer basket in the pot, and steam the cauliflower until very tender, about 10-13 minutes.
- Remove the garlic from its skin and place it in a food processor along with the cauliflower, parmesan, butter, Greek yogurt, thyme, salt, and pepper.
- Process the mixture until smooth, scraping down the sides as needed.
- Serve warm, garnished with parsley if desired.
