Roasted Garlic & Goat Cheese Cauliflower Mash

Instructions
- 1. Bring a pot of water to a boil and add the cauliflower, cooking for 5 minutes.
- 2. Drain the cauliflower and transfer it to paper towels to blot excess moisture.
- 3. In a large bowl, combine the cauliflower, butter, goat cheese, cream or milk, roasted garlic, salt, and pepper.
- 4. Blend the mixture until smooth, or process it in a food processor.
