Roasted Garlic & Goat Cheese Cauliflower Mash

Ingredients

  • 1 head cauliflower, cut into florets (about 3 cups)
  • 1 tablespoon butter
  • 3 ounces goat cheese, softened
  • 1 tablespoon cream or milk
  • 1 head roasted garlic
  • 1 teaspoon sea salt
  • ½ teaspoon fresh ground pepper

Instructions

  1. 1. Bring a pot of water to a boil and add the cauliflower, cooking for 5 minutes.
  2. 2. Drain the cauliflower and transfer it to paper towels to blot excess moisture.
  3. 3. In a large bowl, combine the cauliflower, butter, goat cheese, cream or milk, roasted garlic, salt, and pepper.
  4. 4. Blend the mixture until smooth, or process it in a food processor.
