Rosemary and Garlic Cauliflower Mash

Ingredients

  • 1 head cauliflower, chopped
  • ¼ cup chicken stock
  • 1 Tbsp plain Greek yogurt
  • 1 Tbsp olive oil
  • 2 cloves garlic, chopped
  • 2 Tbsp grated Parmesan cheese
  • 1 wedge Laughing cow cheese, garlic and herb
  • a pinch sea salt
  • ¼ tsp pepper
  • ½ tsp fresh rosemary, chopped

Instructions

  1. 1. Boil water in a medium pot and add the chopped cauliflower, cooking for about 10 minutes until tender.
  2. 2. Drain the cauliflower and pat it dry.
  3. 3. In a food processor, combine the hot cauliflower with chicken stock, Greek yogurt, olive oil, garlic, and cheeses, then process until smooth.
  4. 4. Stir in salt, pepper, and rosemary before serving.
