Romanesco Cauliflower Mash

Ingredients

The mash

  • 1 cup water
  • 1 head Romanesco cauliflower, florets trimmed
  • 1 unit shallot, minced
  • 1 clove garlic, minced
  • 2 tablespoons Greek yogurt
  • ½ unit lemon, juiced
  • ¼ teaspoon garlic powder
  • to taste unit salt
  • to taste unit pepper

Garnish

  • 2 to 3 stalks chives, minced

Instructions

  1. In a medium saucepan, combine water, a few pinches of salt, and Romanesco cauliflower florets. Cover and simmer for about 10 minutes until tender.
  2. Reserve the cauliflower broth and drain the cauliflower.
  3. In the same saucepan, heat a teaspoon of olive oil. Add minced shallot and cook until soft, about 5 minutes.
  4. Add minced garlic and cook for another minute.
  5. Return the reserved cauliflower florets to the pot with a few splashes of broth and blend until smooth using an immersion blender or food processor.
  6. Stir in Greek yogurt, garlic powder, and pepper until combined.
  7. Add lemon juice and salt to taste, then transfer to a bowl and garnish with chives and more pepper.
