Vegan Mashed Cauliflower

Instructions
- Preheat the oven to 450°F (230°C) and prepare a baking sheet.
- Coat the cauliflower with olive oil and place it on the baking sheet with smashed garlic cloves.
- Roast in the oven for 20 minutes.
- Remove the cauliflower and garlic from the oven and add them to a food processor with sea salt.
- Heat the vegan butter and coconut milk until the butter melts and add to the food processor.
- Process everything on high for 3-4 minutes until smooth, adding more coconut milk if needed.
- Taste and adjust salt if necessary, then serve warm.
