Vegan Mashed Cauliflower

Ingredients

The base

  • 3 to 4 cups cauliflower florets
  • 2 teaspoons olive oil
  • 4 cloves garlic
  • 1 teaspoon sea salt

The creamy mixture

  • 3 tablespoons vegan butter
  • ¾ to 1 cup coconut milk

Optional add-ins

  • to taste dried parsley
  • to taste chives
  • to taste black pepper

Instructions

  1. Preheat the oven to 450°F (230°C) and prepare a baking sheet.
  2. Coat the cauliflower with olive oil and place it on the baking sheet with smashed garlic cloves.
  3. Roast in the oven for 20 minutes.
  4. Remove the cauliflower and garlic from the oven and add them to a food processor with sea salt.
  5. Heat the vegan butter and coconut milk until the butter melts and add to the food processor.
  6. Process everything on high for 3-4 minutes until smooth, adding more coconut milk if needed.
  7. Taste and adjust salt if necessary, then serve warm.
