Korean Strawberry Milk

Ingredients

  • 1 pound strawberries, finely diced
  • ¼ cup cane or brown sugar
  • 1 squeeze lemon juice
  • 2-3 cups unsweetened non-dairy milk

Instructions

  1. Macerate ¾ cup of diced strawberries with 1 tablespoon of sugar and let it sit aside.
  2. In a pan, combine 2 cups of diced strawberries with 3 tablespoons of sugar and a squeeze of lemon juice, then bring to a boil.
  3. Reduce heat and simmer for about 10 minutes, stirring frequently until the mixture is syrupy.
  4. Chill the syrup in the refrigerator until cold.
  5. In a glass, combine 2-3 tablespoons of syrup, ¾ cup of milk, ice, and 1 tablespoon of macerated strawberries. Stir to combine.
