Ingredients

The oatmeal

  • 1 cup rolled oats
  • 2 cups plain, unsweetened almond milk
  • 2 tablespoons unsweetened cocoa powder
  • 1 large banana, mashed
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • pinch salt

The toppings

  • 2 tablespoons peanut butter, divided
  • 1 tablespoon maple syrup
  • 1 tablespoon chocolate chips (optional)

Instructions

  1. Combine all ingredients in a medium pot, reserving 1 tablespoon of peanut butter for drizzling later.
  2. Heat the mixture over medium/high until it boils, then reduce to medium and cook for about 10 minutes, stirring often until thickened.
  3. Serve the oatmeal in bowls and drizzle the reserved peanut butter on top.
  4. Optionally, add chocolate chips and a sprinkle of sea salt before enjoying.
