Oatmeal with Banana and Blueberries

Ingredients

The Oatmeal

  • 1 cup oats
  • 1 large ripe banana (sliced)
  • 2 cups almond milk
  • 2 tbsp chia seeds
  • 1 tsp pure vanilla extract
  • a pinch sea salt
  • to taste blueberries

The Nut Butter Sauce

  • 2 tbsp almond butter
  • 1-2 tbsp almond milk (to thin)

Optional Toppings

  • to taste cacao nibs
  • to taste maple butter

Instructions

  1. Combine oats, sliced banana, almond milk, chia seeds, vanilla extract, and sea salt in a pot.
  2. Cook over medium heat, stirring occasionally, until the mixture thickens and the oats are cooked.
  3. Once cooked, remove from heat and stir in blueberries.
  4. In a separate bowl, mix almond butter with almond milk to create a sauce.
  5. Pour the almond butter sauce over the oatmeal.
  6. Top with cacao nibs and maple butter if desired.
