Ingredients

The base

  • 2 cups rolled oats
  • ¼ cup olive oil
  • 2 tablespoons olive oil
  • ¼ cup almond butter
  • ¼ cup maple syrup
  • 8 pieces medjool dates, pitted
  • 1–2 pieces zucchini, grated and squeezed once (about 2 cups total, divided)
  • 2 pieces eggs
  • 1 teaspoon baking soda
  • pinch kosher salt

Optional toppings

  • to taste chocolate chips

Instructions

  1. Preheat the oven to 350°F.
  2. Set aside half of the zucchini and chocolate chips for later.
  3. Blend the remaining ingredients until a smooth batter forms.
  4. Stir in the reserved chocolate chips and zucchini.
  5. Pour the batter into a square baking dish and bake for 30-40 minutes until golden brown.
  6. Allow to cool completely for clean cuts, or enjoy warm.
