Flourless Almond Butter Bars with Zucchini

Instructions
- 1. Preheat the oven to 350°F and spray an 8x8 inch baking pan with cooking spray.
- 2. In a large bowl, whisk together almond butter, grated zucchini, egg, maple syrup, and vanilla until well combined.
- 3. Add baking soda, cinnamon, nutmeg, and salt to the mixture and fold in chocolate chips if desired.
- 4. Pour the batter into the prepared baking pan and top with additional chocolate chips if you like.
- 5. Bake for 30 minutes or until a knife inserted in the center comes out clean.
