Flourless Almond Butter Bars with Zucchini

Ingredients

  • ¾ cup creamy almond butter
  • 1 heaping cup grated zucchini
  • 1 large egg
  • ¼ cup pure maple syrup
  • 1 tsp vanilla extract
  • ¾ tsp baking soda
  • 2 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp fine sea salt
  • cup chocolate chips (optional)

Instructions

  1. 1. Preheat the oven to 350°F and spray an 8x8 inch baking pan with cooking spray.
  2. 2. In a large bowl, whisk together almond butter, grated zucchini, egg, maple syrup, and vanilla until well combined.
  3. 3. Add baking soda, cinnamon, nutmeg, and salt to the mixture and fold in chocolate chips if desired.
  4. 4. Pour the batter into the prepared baking pan and top with additional chocolate chips if you like.
  5. 5. Bake for 30 minutes or until a knife inserted in the center comes out clean.
