Ingredients

  • 1 medium Zucchini, finely grated with as much moisture squeezed out as possible
  • 1 cup Rolled Oats
  • 1 cup Gluten-Free Flour
  • ½ cup Coconut Sugar
  • 1 teaspoon Baking Soda
  • 2 teaspoons Vanilla Extract
  • ½ teaspoon Sea Salt
  • 1 large Egg
  • cup Coconut Oil, melted
  • ½ cup Walnuts, chopped
  • 1 cup Chocolate Chips

Instructions

  1. Preheat the oven to 350°F.
  2. Wash and grate the zucchini, then squeeze out as much moisture as possible.
  3. In a large bowl, mix together the oats, gluten-free flour, coconut sugar, baking soda, sea salt, vanilla extract, egg, and melted coconut oil until fully combined.
  4. Add the zucchini, walnuts, and chocolate chips to the mixture and mix until fully combined.
  5. Line an 8x8 baking dish with parchment paper and press the dough evenly into the dish.
  6. Bake for 26-28 minutes, or until the tops are golden and a toothpick comes out clean.
  7. Allow the bars to cool completely before removing them from the baking dish and slicing.
