One Bowl Oatmeal Chocolate Chip Zucchini Bars

Instructions
- Preheat the oven to 350°F.
- Wash and grate the zucchini, then squeeze out as much moisture as possible.
- In a large bowl, mix together the oats, gluten-free flour, coconut sugar, baking soda, sea salt, vanilla extract, egg, and melted coconut oil until fully combined.
- Add the zucchini, walnuts, and chocolate chips to the mixture and mix until fully combined.
- Line an 8x8 baking dish with parchment paper and press the dough evenly into the dish.
- Bake for 26-28 minutes, or until the tops are golden and a toothpick comes out clean.
- Allow the bars to cool completely before removing them from the baking dish and slicing.
