Zucchini Bars

Ingredients

The bars

  • 2 cups gluten free rolled oats
  • ½ cup peanut butter
  • cups banana, mashed
  • ¼ cup zucchini, shredded
  • ½ cup chocolate chips

Optional flavor boosters

  • to taste vanilla extract
  • a pinch baking powder
  • a pinch salt

Instructions

  1. Preheat the oven to 180C/350F and line an 8 x 8-inch pan with parchment paper.
  2. In a large bowl, mix all ingredients except zucchini and chocolate chips until combined.
  3. Fold in the shredded zucchini and chocolate chips.
  4. Transfer the batter to the lined pan and spread it out.
  5. Top with extra chocolate chips if desired.
  6. Bake for 18-25 minutes or until a toothpick comes out clean.
  7. Allow the bars to cool completely in the pan before slicing into 8 bars.
