Zucchini Bars

Instructions
- Preheat the oven to 180C/350F and line an 8 x 8-inch pan with parchment paper.
- In a large bowl, mix all ingredients except zucchini and chocolate chips until combined.
- Fold in the shredded zucchini and chocolate chips.
- Transfer the batter to the lined pan and spread it out.
- Top with extra chocolate chips if desired.
- Bake for 18-25 minutes or until a toothpick comes out clean.
- Allow the bars to cool completely in the pan before slicing into 8 bars.
