Chocolate Dipped Zucchini Granola Bars

Ingredients

The base

  • 2 cups freshly grated zucchini
  • 3 cups old fashioned oats
  • 1 tablespoon butter or coconut oil
  • 1 cup brown rice krispies
  • 1 cup whole grain Cheerios
  • ½ cup almonds, roughly chopped
  • 1 tablespoon chia seeds
  • 1 tablespoon ground flax seeds
  • ¼ teaspoon salt

The binding mixture

  • ½ cup creamy peanut butter or almond butter
  • ½ cup honey or maple syrup
  • teaspoons vanilla extract

The chocolate coating

  • 12 ounces semi-sweet or dark chocolate

Instructions

  1. Preheat the oven to 350°F and line a baking dish with parchment paper.
  2. In a large bowl, combine the zucchini, oats, melted butter or coconut oil, brown rice krispies, Cheerios, almonds, chia seeds, ground flax, and salt.
  3. In a separate bowl, mix the peanut butter and honey, heating in the microwave until smooth.
  4. Stir in the vanilla extract and pour the mixture over the dry ingredients, mixing well.
  5. Press the mixture firmly into the prepared pan and bake for 20 to 25 minutes until golden.
  6. Let the bars cool completely before cutting them into pieces.
  7. Melt the chocolate and dip the bars in it, placing them on a lined baking sheet.
  8. Freeze the bars for 10 minutes, flip them, and drizzle with any remaining chocolate if desired.
  9. Freeze again for 5 minutes and then store in a sealed container.
