Chocolate Dipped Zucchini Granola Bars

Instructions
- Preheat the oven to 350°F and line a baking dish with parchment paper.
- In a large bowl, combine the zucchini, oats, melted butter or coconut oil, brown rice krispies, Cheerios, almonds, chia seeds, ground flax, and salt.
- In a separate bowl, mix the peanut butter and honey, heating in the microwave until smooth.
- Stir in the vanilla extract and pour the mixture over the dry ingredients, mixing well.
- Press the mixture firmly into the prepared pan and bake for 20 to 25 minutes until golden.
- Let the bars cool completely before cutting them into pieces.
- Melt the chocolate and dip the bars in it, placing them on a lined baking sheet.
- Freeze the bars for 10 minutes, flip them, and drizzle with any remaining chocolate if desired.
- Freeze again for 5 minutes and then store in a sealed container.
