Spinach Gratin

Ingredients

  • 3 tbsp whipped butter
  • 1 cup finely chopped onion
  • ¼ cup all purpose flour
  • ¼ tsp fresh grated nutmeg
  • 3 cups 2% milk
  • 3 lbs frozen chopped spinach, defrosted
  • ¾ cup Parmesan cheese, freshly grated
  • 1 tbsp kosher salt
  • ½ tsp black pepper, freshly ground
  • ½ cup Gruyere cheese, shredded

Instructions

  1. Preheat the oven to 425°F.
  2. Melt the butter in a heavy-bottomed pan over medium heat and sauté the onions until translucent.
  3. Add the flour and nutmeg, cooking for an additional 2 minutes while stirring.
  4. Pour in the milk and cook until the mixture thickens.
  5. Squeeze excess liquid from the spinach and add it to the sauce.
  6. Stir in ½ cup of Parmesan cheese and season with salt and pepper.
  7. Transfer the spinach mixture to a large baking dish and sprinkle the remaining Parmesan and Gruyere cheese on top.
  8. Bake for 20 minutes until hot and bubbly. Serve hot.
