Spinach Gratin

Instructions
- Preheat the oven to 425°F.
- Melt the butter in a heavy-bottomed pan over medium heat and sauté the onions until translucent.
- Add the flour and nutmeg, cooking for an additional 2 minutes while stirring.
- Pour in the milk and cook until the mixture thickens.
- Squeeze excess liquid from the spinach and add it to the sauce.
- Stir in ½ cup of Parmesan cheese and season with salt and pepper.
- Transfer the spinach mixture to a large baking dish and sprinkle the remaining Parmesan and Gruyere cheese on top.
- Bake for 20 minutes until hot and bubbly. Serve hot.
