Ingredients

The spinach

  • 2 12-ounce packages fresh spinach, thawed and drained

The sauce

  • 3-4 tablespoons butter
  • 1 tablespoon garlic, minced
  • ½ medium onion, diced
  • ¼ cup all-purpose flour
  • 1 teaspoon Creole seasoning
  • ¾ cup milk
  • 1 12-ounce can evaporated milk
  • ½ cup Gruyere cheese, shredded
  • ¾ cup freshly grated Parmesan cheese
  • ½ teaspoon nutmeg
  • 1 teaspoon Worcestershire sauce
  • to taste salt and pepper

Instructions

  1. If using fresh spinach, boil water, add spinach for a minute until wilted, then cool in cold water. If using frozen spinach, skip this step.
  2. Drain excess moisture from the spinach using a colander and squeeze out any remaining water.
  3. In a large skillet over medium heat, melt the butter, then add garlic, onions, and Creole seasoning. Stir for 2-3 minutes until fragrant.
  4. Add flour and whisk until combined, cooking for another minute to remove raw flour taste.
  5. Slowly add evaporated milk while stirring to avoid lumps, then add regular milk.
  6. Simmer the sauce gently while whisking until it thickens, about 3-5 minutes.
  7. Stir in the cheeses until melted and smooth, then add the spinach and mix well.
  8. Add nutmeg and Worcestershire sauce, adjusting seasonings to taste. Cook for an additional 1-2 minutes until heated through.
  9. Serve hot.
