Creamed Spinach

Instructions
- If using fresh spinach, boil water, add spinach for a minute until wilted, then cool in cold water. If using frozen spinach, skip this step.
- Drain excess moisture from the spinach using a colander and squeeze out any remaining water.
- In a large skillet over medium heat, melt the butter, then add garlic, onions, and Creole seasoning. Stir for 2-3 minutes until fragrant.
- Add flour and whisk until combined, cooking for another minute to remove raw flour taste.
- Slowly add evaporated milk while stirring to avoid lumps, then add regular milk.
- Simmer the sauce gently while whisking until it thickens, about 3-5 minutes.
- Stir in the cheeses until melted and smooth, then add the spinach and mix well.
- Add nutmeg and Worcestershire sauce, adjusting seasonings to taste. Cook for an additional 1-2 minutes until heated through.
- Serve hot.
