Grilled BBQ Shrimp Salad

The Salad

raw shrimp, deveined and thawed if previously frozen

romaine, chopped

English cucumber, diced

tomato, diced

red onion, diced

The Marinade/Dressing

cup
BBQ sauce

½
cup
avocado oil
-
¼
cup
lemon juice
-
¼
cup
apple cider vinegar

honey

tsp
salt

pepper
Instructions
- Whisk together all ingredients for the marinade/dressing.
- Cover the raw shrimp with 1/3 cup of the marinade and set aside for 20 minutes.
- Heat 1 tbsp avocado oil in a small pan over medium-high heat and add corn, cooking until golden brown.
- Chop all vegetables and add them to a large bowl or plate.
- Preheat the grill to medium-high heat and spray with nonstick spray.
- Grill the shrimp for 2 minutes on each side.
- Add the grilled shrimp to the salad and top with veggies, corn, avocado, and remaining dressing.
