Grilled BBQ Shrimp Salad

Ingredients

The Salad

  • 1 lb raw shrimp, deveined and thawed if previously frozen
  • 1 tbsp avocado oil
  • 1 can corn, drained
  • 2 hearts romaine, chopped
  • ½ large English cucumber, diced
  • 1 large tomato, diced
  • 1 small red onion, diced
  • 2 avocados, diced

The Marinade/Dressing

  • ½ cup BBQ sauce
  • ½ cup avocado oil
  • ¼ cup lemon juice
  • ¼ cup apple cider vinegar
  • 2 tbsp honey
  • ½ tsp salt
  • ¼ tsp pepper

Instructions

  1. Whisk together all ingredients for the marinade/dressing.
  2. Cover the raw shrimp with 1/3 cup of the marinade and set aside for 20 minutes.
  3. Heat 1 tbsp avocado oil in a small pan over medium-high heat and add corn, cooking until golden brown.
  4. Chop all vegetables and add them to a large bowl or plate.
  5. Preheat the grill to medium-high heat and spray with nonstick spray.
  6. Grill the shrimp for 2 minutes on each side.
  7. Add the grilled shrimp to the salad and top with veggies, corn, avocado, and remaining dressing.
