Ingredients

The batter

  • cups almond flour
  • ½ cup cocoa powder
  • 1 cup granulated sweetener of choice
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 3 large eggs
  • 1 cup sour cream or Greek yogurt
  • 1 teaspoon vanilla extract

The frosting

  • 1 cup chocolate frosting

Instructions

  1. Preheat the oven to 180C/350F and prepare a 12-count muffin tin with liners.
  2. Mix the dry ingredients in a large bowl until combined.
  3. Add the wet ingredients to the dry ingredients and mix until mostly smooth.
  4. Distribute the batter evenly into the muffin tin.
  5. Bake for about 20 minutes or until a toothpick comes out mostly clean.
  6. Let the cupcakes cool completely before frosting.
