Instructions
- Preheat the oven to 350°F and toast nuts if using.
- Mash the bananas and measure to ensure you have 1 cup.
- In a mixing bowl, beat together the butter and coconut sugar until smooth.
- Add the mashed banana, Greek yogurt, honey, eggs, pumpkin, and vanilla to the mixture.
- Sprinkle in the pumpkin pie spice, baking soda, baking powder, and salt.
- Add the flour and stir until just combined, then fold in the nuts if using.
- Let the batter rest for 15 minutes.
- Pour the batter into a greased loaf pan and bake for 55 to 70 minutes, checking for doneness.
- Cool the bread completely before slicing and refrigerate for better flavor.
