Ingredients

The bread

  • 1 cup very overripe mashed banana
  • 1 cup pumpkin puree
  • cup almond butter
  • ½ cup pure maple syrup
  • 2 tbsp avocado oil
  • 2 large eggs
  • 1 ½ tsp pure vanilla extract
  • 2 cups white whole wheat flour
  • 1 tsp baking soda
  • ¾ tsp fine sea salt
  • 2 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 1 tbsp raw sugar or granulated sugar

The frosting (optional)

  • to taste healthy cinnamon cream cheese frosting

Instructions

  1. Preheat the oven to 350°F and line a 9x5 inch loaf pan with parchment paper.
  2. In a medium bowl, whisk together the mashed banana, pumpkin puree, almond butter, maple syrup, avocado oil, eggs, and vanilla until smooth.
  3. Add the flour, baking soda, salt, pumpkin pie spice, and cinnamon, stirring gently until just combined.
  4. Pour the batter into the prepared loaf pan and sprinkle raw sugar on top.
  5. Bake for 1 hour or until a knife inserted into the center comes out clean.
  6. Cool on a wire rack, then frost individual slices if desired and serve.
