Ingredients

The pie crust

  • 1 recipe Homemade Pie Crust or All Butter Pie Crust

The filling

  • 6 cups fresh blueberries
  • cup granulated sugar
  • ¼ cup all-purpose flour
  • 2 tablespoons cornstarch
  • ¼ teaspoon ground cinnamon
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon cold unsalted butter
  • 1 large egg egg wash
  • 1 tablespoon milk for egg wash
  • to taste optional coarse sugar for sprinkling

Instructions

  1. Prepare the pie crust through step 5.
  2. Mix blueberries, sugar, flour, cornstarch, cinnamon, lemon juice, and lemon zest in a bowl until moistened.
  3. Preheat the oven to 425°F (218°C) and place a baking sheet on the lower rack.
  4. Roll out the chilled pie dough and place it in a pie dish, then add the filling and dot with butter.
  5. Roll out the second dough disc, cut into strips, and arrange in a lattice pattern over the filling.
  6. Brush the crust with egg wash and sprinkle with coarse sugar if desired.
  7. Bake at 425°F for 25 minutes, then reduce to 375°F (190°C) and continue baking for 40-50 minutes until bubbling.
  8. Cool the pie for at least 4 hours before slicing.
