Instructions
- Prepare the pie crust through step 5.
- Mix blueberries, sugar, flour, cornstarch, cinnamon, lemon juice, and lemon zest in a bowl until moistened.
- Preheat the oven to 425°F (218°C) and place a baking sheet on the lower rack.
- Roll out the chilled pie dough and place it in a pie dish, then add the filling and dot with butter.
- Roll out the second dough disc, cut into strips, and arrange in a lattice pattern over the filling.
- Brush the crust with egg wash and sprinkle with coarse sugar if desired.
- Bake at 425°F for 25 minutes, then reduce to 375°F (190°C) and continue baking for 40-50 minutes until bubbling.
- Cool the pie for at least 4 hours before slicing.
