Ingredients

The stir-fry

  • 3 tablespoons oil
  • 1 cup onion, green and red bell peppers, cut
  • 2 cups mixed vegetables (broccoli florets, sliced carrot and trimmed sugar snap peas/snow peas)
  • cups canned vegetables (straw mushroom, bamboo shoot sliced, young baby corn and water chestnut sliced)
  • 1 cup meat (pork/BBQ pork, chicken breast, and beef sliced)
  • ½ cup mixed seafood (peeled and cleaned shrimp, lobster meat/crab meat and sea scallops)
  • 3 cloves garlic, peeled and minced

The marinade

  • ¼ teaspoon sugar
  • ¼ teaspoon salt
  • ¼ teaspoon ground white pepper
  • 1 teaspoon dry sherry wine or any Chinese cooking wine
  • ½ teaspoon cornstarch

The brown sauce

  • 1 tablespoon light soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sweet soy sauce
  • ½ teaspoon sesame oil
  • 3 dashes ground white pepper
  • 2 tablespoons dry sherry wine or any Chinese cooking wine
  • ½-¾ cup chicken broth mixed with 1 teaspoon of cornstarch
  • to taste salt and sugar

Instructions

  1. Marinade the meat and seafood with salt, pepper, sugar, and cooking wine, then set aside.
  2. Mix all the ingredients for the Brown Sauce in a bowl and set aside.
  3. Heat 2 tablespoons of oil in a wok until smoky, stir-fry onions and peppers until lightly charred, add minced garlic, and stir-fry until fragrant.
  4. Add broccoli florets and carrots, stir-fry for about 2 minutes, season with salt and pepper, then set aside.
  5. Clean the wok, heat the remaining oil, and stir-fry shrimp and lobster/crab meat for 1 minute, then add sliced beef and pork, cooking until lightly browned.
  6. Add mixed canned vegetables, stir well, then pour in the Brown Sauce and chicken broth, stir-frying until vegetables are tender and meat is cooked through.
  7. Adjust flavors as needed, then serve with hot steamed rice.
