Ingredients

  • 4 slices bacon
  • 1 pound Italian sausage
  • ½ teaspoon crushed red pepper flakes
  • 12 ounces cauliflower florets
  • ½ medium onion
  • 1 tablespoon garlic
  • 5 cups chicken stock
  • ½ bunch curly kale
  • 1 to 1½ cups heavy cream
  • to taste salt
  • to taste pepper

Instructions

  1. Cook the Italian sausage with crushed red pepper flakes until browned, then drain and set aside.
  2. In the same pot, cook the bacon until crisp, then remove and set aside.
  3. Sauté onions and garlic in the remaining bacon fat until soft.
  4. Add chicken stock and bring to a boil, then add cauliflower and cook until fork tender.
  5. Reduce heat and stir in the cooked sausage and heavy cream, heating through.
  6. Add bacon and kale, cooking until the kale is bright green and softened.
  7. Season with salt and pepper, then serve.
