Ingredients

The soup base

  • 1 pound ground sausage
  • 3 slices bacon
  • 1 cup onion, chopped
  • 3 cloves garlic, chopped
  • 1 head fresh cauliflower, chopped
  • 5 cups low-sodium chicken broth
  • 1 teaspoon dried oregano
  • to taste salt
  • to taste pepper

The finishing touches

  • 1 cup heavy whipping cream
  • 3 cups fresh kale, stems removed
  • to taste parmesan cheese (optional)

Instructions

  1. Brown the bacon and sausage in a large pot over medium-high heat.
  2. Drain excess fat, leaving a couple of tablespoons for flavor.
  3. Add the chopped onion and cook until translucent, then add garlic, chicken broth, cauliflower, and oregano.
  4. Stir to combine, cover, and reduce heat to medium, cooking for 15 minutes until cauliflower is soft.
  5. Uncover and add heavy cream, kale, salt, and pepper, cooking until kale wilts.
  6. Cool before serving.
