Healthy Zuppa Toscana

Ingredients

  • ½ pieces bacon, diced
  • 1 lb ground Italian sausage
  • 1 unit onion, diced
  • 4 cloves garlic, minced
  • 1 head cauliflower, cut into small florets
  • 4 cups kale, chopped
  • 2 tbsp Italian seasoning
  • 6 cups chicken broth
  • 1 cup coconut milk
  • to taste salt and pepper

Instructions

  1. Dice the bacon and chop the onion and garlic.
  2. In a large stock pot or Dutch Oven over medium heat, cook the bacon and Italian sausage until browned and crispy, about 10-12 minutes.
  3. Add the onion and cook for another 3-4 minutes.
  4. Stir in the garlic and Italian seasoning, cooking for an additional 1-2 minutes.
  5. Add the chicken broth and cauliflower, bringing to a boil.
  6. Reduce heat, cover, and simmer for 10 minutes.
  7. Remove the cover and add the kale and coconut milk, simmering for an additional 5 minutes until the kale is wilted.
  8. Taste and season with salt and pepper as desired, then serve immediately.
