Beef Stir Fry Noodles

Ingredients

The sauce

  • 3 Tbsp soy sauce
  • 1 Tbsp water
  • 1 Tbsp brown sugar
  • 1-2 Tbsp chili garlic sauce
  • 1 tsp toasted sesame oil

The stir fry

  • 8 oz rice noodles
  • 2 cloves garlic
  • 1 Tbsp grated ginger
  • 1 Tbsp vegetable oil
  • ½ lb lean ground beef
  • 1 carrot
  • 3-4 green onions
  • 1 handful fresh cilantro (optional)

Instructions

  1. Cook the rice noodles according to the package directions until al dente, then drain and set aside.
  2. Prepare the sauce by mixing soy sauce, water, brown sugar, chili garlic sauce, and sesame oil together.
  3. Mince the garlic and grate the ginger. Grate the carrot and slice the green onions, separating the white parts from the green.
  4. Heat vegetable oil in a large skillet over medium heat, then add ground beef, garlic, and ginger, sautéing until the beef is cooked through.
  5. Add the white parts of the green onions and sauté for one more minute, then add the grated carrot and sauté for an additional minute.
  6. Stir in the drained noodles and the prepared sauce, mixing until everything is well coated and any extra moisture is absorbed.
  7. Turn off the heat and top with the green parts of the green onions and fresh cilantro before serving.
