Instructions
- Cook the rice noodles according to the package directions until al dente, then drain and set aside.
- Prepare the sauce by mixing soy sauce, water, brown sugar, chili garlic sauce, and sesame oil together.
- Mince the garlic and grate the ginger. Grate the carrot and slice the green onions, separating the white parts from the green.
- Heat vegetable oil in a large skillet over medium heat, then add ground beef, garlic, and ginger, sautéing until the beef is cooked through.
- Add the white parts of the green onions and sauté for one more minute, then add the grated carrot and sauté for an additional minute.
- Stir in the drained noodles and the prepared sauce, mixing until everything is well coated and any extra moisture is absorbed.
- Turn off the heat and top with the green parts of the green onions and fresh cilantro before serving.
