Ingredients

The stir fry

  • 1 lb lean ground beef
  • 8 oz fresh green beans
  • 1 small red bell pepper
  • 1 small yellow onion
  • 3 cloves garlic
  • 1 teaspoon grated fresh ginger
  • ½ – 1 teaspoon chili garlic sauce

The sauce

  • 2 teaspoons toasted sesame oil
  • cup coconut aminos
  • 1 teaspoon honey

For serving

  • to taste cooked white rice, brown rice, or cauliflower rice
  • to taste sesame seeds

Instructions

  1. Heat a large skillet over medium-high heat and coat with cooking spray and 1 teaspoon of sesame oil.
  2. Add green beans, red bell pepper, and onion to the skillet, cooking until the green beans are tender.
  3. Transfer the vegetables to a bowl and cover to keep warm.
  4. In the same skillet, add more cooking spray and the ground beef, breaking it apart and cooking until browned.
  5. Add minced garlic and cook until fragrant, then drain excess fat.
  6. Return the skillet to the heat and add the remaining sesame oil, coconut aminos, honey, ginger, and chili garlic sauce, stirring to combine.
  7. Mix the vegetables back into the skillet and cook until heated through.
  8. Serve the stir fry over rice and sprinkle with sesame seeds if desired.
