Thai Basil Beef Noodle Stir-Fry

Ingredients

The stir-fry

  • 8 ounces rice noodles
  • 2 tablespoons oil
  • 1 ¼ pounds sirloin or flank steak
  • to taste fine sea salt and freshly-cracked black pepper
  • 1 small white onion
  • 8 ounces shiitake or baby bella mushrooms
  • 1 red bell pepper
  • 4 cloves garlic
  • 1 ½ cups fresh Thai basil leaves
  • to taste optional toppings (sliced green onions, toasted sesame seeds, chopped peanuts, fried garlic, fresh lime wedges)

The sauce

  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons oyster sauce
  • 2 tablespoons fish sauce
  • 1 tablespoon sweet dark soy sauce
  • 1 tablespoon chile garlic sauce

Instructions

  1. Whisk the sauce ingredients together in a small bowl until combined.
  2. Cook the noodles according to package instructions until al dente, then drain and set aside.
  3. Heat 1 tablespoon of oil in a large pan over medium-high heat, season the steak with salt and pepper, and sauté until browned.
  4. Transfer the cooked steak to a plate and return the pan to heat.
  5. Add the remaining oil and sauté the onion for 2 minutes, then add mushrooms, bell pepper, and garlic, cooking until tender.
  6. Add the cooked noodles, sauce, steak, and Thai basil to the pan, tossing everything to coat evenly.
  7. Serve immediately, garnished with desired toppings.
