Ingredients

The beef and mushrooms

  • 13 oz beef tenderloin (or flank steak), diced
  • 2 tablespoons olive oil, divided
  • 2 cloves garlic, sliced
  • 7 pieces baby bella mushrooms, quartered

The marinade

  • 1 tablespoon reduced-sodium soy sauce
  • ½ tablespoon dark soy sauce
  • 1 tablespoon cornstarch
  • ½ teaspoon baking soda

The brown sauce

  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • ½ teaspoon sugar
  • ½ tablespoon cornstarch
  • 4 tablespoons water

Instructions

  1. Marinate the beef with soy sauce, dark soy sauce, cornstarch, and baking soda for 10 to 15 minutes.
  2. Prepare the brown sauce by mixing soy sauce, oyster sauce, sugar, cornstarch, and water in a small bowl. Set aside.
  3. Heat 1 tablespoon of oil in a wok or skillet over medium-high heat, add the sliced garlic, and fry until crispy and golden brown. Transfer to a plate and set aside.
  4. Increase the heat to high, add the beef, and stir-fry until about 70% cooked. Remove from the pan and set aside.
  5. In the same wok, add 1 tablespoon of oil and stir-fry the mushrooms until soft.
  6. Return the beef to the wok and stir-fry until cooked through.
  7. Add the brown sauce and stir until it thickens. Top with crispy garlic and serve immediately.
