The marinade

reduced-sodium soy sauce

The brown sauce

soy sauce

oyster sauce

Instructions
- Marinate the beef with soy sauce, dark soy sauce, cornstarch, and baking soda for 10 to 15 minutes.
- Prepare the brown sauce by mixing soy sauce, oyster sauce, sugar, cornstarch, and water in a small bowl. Set aside.
- Heat 1 tablespoon of oil in a wok or skillet over medium-high heat, add the sliced garlic, and fry until crispy and golden brown. Transfer to a plate and set aside.
- Increase the heat to high, add the beef, and stir-fry until about 70% cooked. Remove from the pan and set aside.
- In the same wok, add 1 tablespoon of oil and stir-fry the mushrooms until soft.
- Return the beef to the wok and stir-fry until cooked through.
- Add the brown sauce and stir until it thickens. Top with crispy garlic and serve immediately.
