Ingredients

Authentic Harissa Paste

  • 4 oz dried chilies
  • 6-8 cloves garlic
  • 1 tablespoon cumin seeds
  • 2 tablespoons caraway seeds
  • 1 tablespoon coriander seeds
  • 3 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 ¾ teaspoons kosher salt
  • 1 teaspoon smoked paprika

Quick Harissa Paste

  • ¾ cup olive oil
  • 1 teaspoon vinegar
  • 2 tablespoons ground cumin
  • 2 tablespoons smoked paprika
  • 1 tablespoon chili powder
  • 1 ¾ teaspoons cayenne or chipotle powder
  • 1 ¾ teaspoons salt
  • 6-10 cloves garlic

Instructions

  1. Remove stems and seeds from the dried chilies and toast them in a dry skillet for 1-2 minutes.
  2. Soak the toasted chilies in boiling water for 15 minutes, then cover and let sit for 30 minutes.
  3. Toast and grind the spices (cumin, coriander, caraway).
  4. Drain the chilies and combine all ingredients in a food processor, blending until desired consistency is reached.
  5. Store in a sealed jar with a layer of olive oil on top to preserve.
