Instructions
- Remove stems and seeds from the dried chilies and toast them in a dry skillet for 1-2 minutes.
- Soak the toasted chilies in boiling water for 15 minutes, then cover and let sit for 30 minutes.
- Toast and grind the spices (cumin, coriander, caraway).
- Drain the chilies and combine all ingredients in a food processor, blending until desired consistency is reached.
- Store in a sealed jar with a layer of olive oil on top to preserve.
