Ingredients

  • 10 pieces dried New Mexico chiles
  • 7 pieces dried chiles de arbol
  • 1 Tbsp cumin seeds
  • 2 tsp coriander seeds
  • 1 tsp caraway seeds
  • 4 cloves garlic
  • 1 ½ tsp smoked paprika
  • 1 tsp sea salt
  • 2 Tbsp lemon juice
  • 1 Tbsp white wine vinegar or apple cider vinegar
  • 1 Tbsp tomato paste
  • ¼ cup olive oil

Instructions

  1. Rehydrate the dried chilies in hot water for 15-20 minutes.
  2. Toast cumin and coriander seeds in a skillet until fragrant, then crush them.
  3. Mix crushed seeds with caraway seeds, minced garlic, smoked paprika, and salt.
  4. Add lemon juice and vinegar to the mixture and blend into a paste.
  5. Once the chilies are rehydrated, remove stems and seeds, then add to the paste.
  6. Blend all ingredients in a food processor until smooth, adding olive oil gradually.
  7. Taste and adjust flavors as needed, then store in a jar.
