Instructions
- Rehydrate the dried chilies in hot water for 15-20 minutes.
- Toast cumin and coriander seeds in a skillet until fragrant, then crush them.
- Mix crushed seeds with caraway seeds, minced garlic, smoked paprika, and salt.
- Add lemon juice and vinegar to the mixture and blend into a paste.
- Once the chilies are rehydrated, remove stems and seeds, then add to the paste.
- Blend all ingredients in a food processor until smooth, adding olive oil gradually.
- Taste and adjust flavors as needed, then store in a jar.
