Homemade Harissa

Ingredients

  • 2 whole roasted red peppers
  • 2 dried ancho chilies
  • 1 dried chile de arbol
  • 2 in chipotle chiles in adobo
  • 1 cup boiling water
  • 1 clove garlic
  • ½ lemon juice
  • to taste salt
  • 2 tablespoons olive oil

Instructions

  1. Soak the dried chiles in boiling water for 20 to 30 minutes until softened.
  2. Remove seeds from the softened chiles and add them to a food processor or blender.
  3. Add the chipotle chiles, garlic, and lemon juice to the processor.
  4. Purée the mixture while slowly adding olive oil to thicken the sauce.
  5. Adjust the consistency with reserved chile water if desired and season with salt and extra lemon juice.
  6. Store the Harissa in the refrigerator for a few weeks.
