Homemade Harissa

Instructions
- Soak the dried chiles in boiling water for 20 to 30 minutes until softened.
- Remove seeds from the softened chiles and add them to a food processor or blender.
- Add the chipotle chiles, garlic, and lemon juice to the processor.
- Purée the mixture while slowly adding olive oil to thicken the sauce.
- Adjust the consistency with reserved chile water if desired and season with salt and extra lemon juice.
- Store the Harissa in the refrigerator for a few weeks.
