The crust

pie crust
Instructions
Squeeze lemon juice into a bowl and slice apples thinly using a mandolin, tossing them in lemon juice to prevent browning.
Mix sliced apples with brown sugar, flour, cinnamon, nutmeg, and salt until well coated.
Roll out the pie crust and place it in a 9-inch pie pan or tart shell, trimming the edges as necessary.
Arrange the apple slices in the crust, starting from the edge and working towards the center, using thin slices for the center.
Freeze the assembled pie for about 20 minutes to firm it up.
Preheat the oven to 350°F (175°C). Brush the crust edges with egg wash.
Bake the pie for 30 minutes, then check for browning; cover with foil if necessary and bake for an additional 20 minutes until golden brown.
In a saucepan, warm honey and bourbon over moderate heat, then brush the warm glaze over the pie.
Sprinkle with flaky sea salt and serve.
