Tuna Cucumber Sushi Rolls

Ingredients

  • 1 large English cucumber
  • ¼ cup mayonnaise or cream cheese
  • 1 tablespoon Sriracha
  • ¼ cup cooked sushi rice, chilled
  • 5 ounces canned white albacore tuna
  • 1 medium jalapeno, thinly sliced
  • ½ medium ripe avocado, sliced
  • 4 pieces radishes, cut into matchsticks
  • 2 tablespoons pickled ginger
  • to taste coarse salt and ground black pepper
  • for garnish sesame seeds
  • for serving low sodium soy sauce

Instructions

  1. Chop cucumber crosswise into two equal-sized pieces and slice lengthwise into thin pieces.
  2. Mix mayonnaise or cream cheese with Sriracha in a small bowl.
  3. Spread a thin layer of the mixture on each cucumber slice.
  4. Place a small scoop of sushi rice and tuna on each slice, then add jalapeno, avocado, radishes, and pickled ginger.
  5. Season with salt and pepper, then roll tightly and secure with a toothpick.
  6. Garnish with sesame seeds and serve with soy sauce.
