Instructions
- Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the ground flax and water, then set aside.
- In a large bowl, combine the coconut, rolled oats, brown sugar, baking powder, salt, and chocolate chips.
- Add the peanut butter, vanilla, and maple syrup to the flax mixture and stir until smooth.
- Combine the wet mixture with the dry ingredients and mix until thoroughly combined, kneading with hands if necessary.
- Form about 13 balls of dough and place them on the baking sheet, flattening each ball slightly.
- Bake for 12 to 14 minutes until the bottoms are golden.
- Let the cookies cool on the baking sheet for 10 minutes before transferring them to a cooling rack.
