Spaghetti Chicken Meatballs

Ingredients

Meatballs

  • 3 pieces chicken breasts
  • ¼ cup whole wheat bread crumbs
  • 1 piece egg
  • 1 tbsp unsalted seasoning
  • 2 tbsp dried parsley
  • 1 tsp salted herbs
  • 2 tsp Dijon mustard
  • ¼ tsp pepper
  • 2 pieces green onions
  • 1 pinch nutmeg

Tomato Sauce

  • 1 piece onion
  • ½ piece red bell pepper
  • 1 piece celery stalk
  • 2 tbsp basil
  • 2 tbsp oregano
  • 2 tbsp thyme
  • 4 tbsp dried parsley
  • ½ tsp sea salt
  • ½ tsp pepper
  • ½ tsp hot pepper flakes
  • 2 pieces bay leaves
  • 1 pinch ground clove
  • 1 pinch nutmeg
  • 2 cans diced tomatoes
  • 1 can tomato paste
  • 1 tsp Dijon mustard
  • 1 cup water

Instructions

  1. Cut chicken breasts into small cubes and grind in a food processor until desired consistency is reached.
  2. Transfer ground chicken to a mixing bowl and add remaining meatball ingredients. Mix well and refrigerate.
  3. In a large saucepan, sauté onions, bell pepper, and celery in olive oil over medium heat for about 5 minutes.
  4. Add other sauce ingredients (except last 4) and cook for another 5 minutes.
  5. Add last 4 sauce ingredients and stir. Lower heat and simmer, stirring occasionally.
  6. Form meatballs from the chicken mixture while the sauce simmers.
  7. Heat olive oil in a large non-stick pan and cook meatballs until golden brown on all sides.
  8. Transfer cooked meatballs to the sauce to finish cooking.
  9. Simmer the sauce for at least 1½ to 2 hours, stirring occasionally.
  10. Serve on whole grain pasta of your choice.
