Instructions
- Cut chicken breasts into small cubes and grind in a food processor until desired consistency is reached.
- Transfer ground chicken to a mixing bowl and add remaining meatball ingredients. Mix well and refrigerate.
- In a large saucepan, sauté onions, bell pepper, and celery in olive oil over medium heat for about 5 minutes.
- Add other sauce ingredients (except last 4) and cook for another 5 minutes.
- Add last 4 sauce ingredients and stir. Lower heat and simmer, stirring occasionally.
- Form meatballs from the chicken mixture while the sauce simmers.
- Heat olive oil in a large non-stick pan and cook meatballs until golden brown on all sides.
- Transfer cooked meatballs to the sauce to finish cooking.
- Simmer the sauce for at least 1½ to 2 hours, stirring occasionally.
- Serve on whole grain pasta of your choice.
