Easy 1-Pot Marinara Sauce

Ingredients

  • 2 Tbsp olive oil
  • 2 large cloves garlic (minced)
  • 2 28-ounce cans peeled crushed or diced tomatoes without salt
  • 1 tsp dried or fresh oregano
  • 1 Tbsp coconut sugar
  • ¾ – 1 tsp sea salt
  • ¼ tsp red pepper flake
  • ½ cup roughly chopped fresh basil
  • 1-3 Tbsp nutritional yeast (optional)
  • 3-4 Tbsp tomato paste (optional)

Instructions

  1. Heat a large pot over medium-low heat and add oil (or water) and garlic, sautéing briefly until golden brown.
  2. Add tomatoes, oregano, coconut sugar, salt, and red pepper flake to the pot.
  3. Bring the mixture to a simmer over medium heat, then reduce to low and simmer uncovered for 30 minutes, stirring occasionally.
  4. Stir in the chopped basil and cook for an additional 5 minutes.
  5. Taste and adjust the flavor as needed, adding more salt, oregano, basil, red pepper flake, or coconut sugar as desired.
  6. Optionally, add nutritional yeast and/or tomato paste for additional flavor and richness.
  7. If the sauce thickens too much, thin it with a little water.
  8. Serve with your favorite Italian dishes or over cooked pasta.
