Quick & Easy Marinara Sauce

Ingredients

  • 3 tablespoons olive oil
  • ½ cup shallots or 1 cup onions, diced
  • 4–6 cloves garlic
  • a pinch red pepper flakes (or up to ¼ teaspoon for a nice kick)
  • 2 pounds ripe tomatoes (or 28-ounce can San Marzano tomatoes)
  • 1 tablespoon fresh oregano (or 1 teaspoon dried oregano)
  • ½ teaspoon salt, more to taste
  • ¼ teaspoon black pepper, more to taste
  • 8–10 leaves basil, torn
  • 1–2 tablespoons tomato paste (optional)
  • 1–2 teaspoons maple syrup or honey (optional)

Instructions

  1. Prep the tomatoes by blending fresh tomatoes or grating them.
  2. Sauté shallots or onions in olive oil until tender, then add garlic, chili flakes, and oregano.
  3. Add the tomatoes and their juices, along with salt and pepper, then simmer uncovered for 8-10 minutes.
  4. Stir in torn basil leaves and adjust seasonings to taste. If needed, add tomato paste or sweetener.
