Instructions
- Prepare the tofu feta by mixing lemon juice, minced garlic, and salt in a bowl, then add the tofu cubes and marinate for at least 30 minutes.
- While the tofu marinates, whisk together the dressing ingredients in a bowl or shake them in a jar until well mixed.
- In a large bowl, combine the chopped romaine lettuce, tomatoes, cucumber, red onion, and olives.
- Drain the marinated tofu feta and add it to the salad bowl.
- Drizzle the dressing over the salad and gently toss to combine.
- Serve the salad on plates.
