Ingredients

The salad

  • 1 pound tomatoes, cut into pieces
  • 1 pound cucumbers, cut into pieces
  • ½ - ⅓ medium red onion, sliced
  • ½ - 1 cup vegan feta cheese, cut into small pieces or crumbled
  • ⅓ - ½ cup kalamata olives

The seasoning

  • 1 tablespoon dried Greek oregano
  • ¼ teaspoon ground black pepper
  • to taste optional sea salt
  • drizzle olive oil

Instructions

  1. Combine the tomatoes, cucumbers, and red onion in a large bowl.
  2. Add the vegan feta, kalamata olives, oregano, salt (if using), black pepper, and olive oil.
  3. Mix everything well to combine.
