Ingredients

The salad

  • ¾ pound tomatoes
  • 1 each English cucumber
  • 1 medium green bell pepper
  • 1 cup pitted kalamata olives
  • ½ cup red onion
  • 8 ounces Greek sheep's milk feta cheese
  • 2 tablespoons capers

The dressing

  • ¼ cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • ¾ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper

Instructions

  1. Chop the tomatoes, cucumber, green bell pepper, red onion, and olives into bite-sized pieces.
  2. Place the chopped vegetables in a large bowl and toss them together.
  3. Season the salad with kosher salt and freshly ground black pepper.
  4. Drizzle the salad with olive oil and red wine vinegar, adjusting to taste.
  5. Top the salad with triangles of feta cheese.
  6. Sprinkle dried oregano and capers on top.
