Soft and Chewy Trail Mix Granola Bars

The binding ingredients

creamy peanut butter

unpasteurized honey

Instructions
- Line an 8" square baking dish with parchment paper and set aside.
- Melt the peanut butter in the microwave for about 1 minute and warm the honey for about 30 seconds.
- In a large mixing bowl, combine the rolled oats, chopped almonds, cranberries, sunflower seeds, pistachios, and salt.
- In a food processor, blend the dates, melted peanut butter, and warm honey until a sticky paste forms.
- Pour the sticky paste over the dry ingredients and mix thoroughly, preferably using your hands.
- Transfer the mixture to the prepared pan and press it firmly into an even layer.
- Refrigerate for about 2 hours until firm.
- Lift the granola bars out using the parchment paper and cut into 12 bars.
