Ingredients

The dry ingredients

  • cups rolled oats
  • ½ cup chopped raw almonds
  • ½ cup dried cranberries
  • ½ cup roasted unsalted sunflower seeds
  • ¼ cup chopped raw shelled pistachios
  • ¼ tsp salt

The binding ingredients

  • ¾ cup creamy peanut butter
  • ½ cup unpasteurized honey
  • ½ cup pitted dates

Instructions

  1. Line an 8" square baking dish with parchment paper and set aside.
  2. Melt the peanut butter in the microwave for about 1 minute and warm the honey for about 30 seconds.
  3. In a large mixing bowl, combine the rolled oats, chopped almonds, cranberries, sunflower seeds, pistachios, and salt.
  4. In a food processor, blend the dates, melted peanut butter, and warm honey until a sticky paste forms.
  5. Pour the sticky paste over the dry ingredients and mix thoroughly, preferably using your hands.
  6. Transfer the mixture to the prepared pan and press it firmly into an even layer.
  7. Refrigerate for about 2 hours until firm.
  8. Lift the granola bars out using the parchment paper and cut into 12 bars.
