Ingredients

The base

  • cup whole almonds
  • cup whole cashews
  • 1 ½ cups old-fashioned whole rolled oats or quick oats
  • cup ground flaxseed

The mix-ins

  • cup dried cranberries
  • cup raisins
  • cup mini chocolate chips

The binding ingredients

  • ½ cup honey (or maple syrup or brown rice syrup)
  • ¾ cup creamy or crunchy peanut butter
  • 2 tablespoons coconut oil

Instructions

  1. Line an 8-inch or 9-inch square baking pan with parchment paper.
  2. Pulse the almonds, cashews, and ½ cup of oats in a food processor until lightly chopped.
  3. Combine the pulsed mixture with the remaining oats, flaxseed, cranberries, and raisins in a large bowl.
  4. Melt the peanut butter, honey, and coconut oil together, then pour over the dry ingredients and mix in the chocolate chips.
  5. Press the mixture firmly into the prepared pan.
  6. Refrigerate for at least 1 hour to set.
  7. Lift the bars out using the parchment paper and cut into squares or rectangles.
