Instructions
- Prepare an 8x8 baking pan by lining it with parchment paper and spraying it with cooking spray.
- In a microwave-safe bowl, combine honey, peanut butter, and coconut oil. Melt and stir until smooth, then add vanilla and let cool.
- In a large bowl, mix oats, cereal, flaxseed, cinnamon, and salt. Add the dried fruit, nuts/seeds, and chocolate chips.
- Pour the peanut butter mixture over the dry ingredients and stir until everything is evenly moistened.
- Transfer the mixture to the prepared pan and press it into an even layer. Chill in the refrigerator for at least 2 hours.
- Once set, remove the bars from the pan and slice them into bars.
